Description

The hills around Kanyakumari district have grown cloves for generations. The unopened flower buds are picked by hand at the moment they blush pink, then dried until they turn a rich mahogany.

We look for whole buds with their round heads still on — that is where much of the aromatic oil lives. Press one with a fingernail and you should see a glint of oil.
