How to Store Whole Spices So They Stay Fragrant
Light, heat, air and moisture are the four enemies of flavour. A few simple habits keep your cardamom, cloves, cinnamon and pepper tasting fresh for months.

Whole spices are remarkably resilient — but only if you treat them kindly. Their flavour lives in volatile oils that slowly escape when exposed to light, heat, air and moisture.
Keep them whole for as long as possible
Grinding multiplies the surface area exposed to air. A cardamom pod or a peppercorn protects its own oils; once ground, the clock starts ticking. Crush or grind just before cooking.
Choose the right container
- Airtight glass jars with well-fitting lids
- Resealable pouches, pressed flat to push out the air
- Away from the stove, the kettle and sunny windowsills
Trust your nose
The easiest freshness test is to crush a little in your palm. If the aroma jumps out at you, it is ready to cook with. If you have to search for it, it is time to restock.
